Now both jaws and jaw plates are identical heights and parallel with each
other.
Why bother? Now one can use the vise itself to measure and setup from.
The jaw tops will be parallel to the mill table travel, and square to the
jaw bodies.
The tops of the jaws are also parallel to the jaw ways, so when you use actual
parallels
(as in the matched bars) they'll be square and true to the cutting tool.
